Hormis ses légendaires saveurs, il est l’inventeur du concept de « brigade », hérité de son expérience militaire lors de la guerre contre la Prusse, qui permit de révolutionner l’organisation et l’efficacité des cuisines de grands établissements. Premier chef du Ritz à Paris, concepteur de recettes mythiques comme la crêpe Suzette ou la pêche Melba, Auguste Escoffier s’est attiré, pendant toute la fin du XIXe et le début du XXe siècle, les faveurs de ses pairs, de ses troupes ainsi que celles des plus grands hommes de son temps. Émile Zola ou Marcel Proust furent notamment très sensibles à son sens de la poésie culinaire...Préfacé par le célèbre chef Michel Roth, président des disciples d’Escoffier, ce biopic en BD raconte par le menu la vie et le parcours du « roi des cuisiniers », probablement l’un des plus prestigieux représentants de la gastronomie à la Française. Illustré par le trait délicat et alléchant de Frédéric Charve, l’ouvrage est scénarisé par Rutile (Dans les cuisines de l’Histoire) qui nous gratifie, en fin d’album, d’un appareil critique pour approfondir le sujet et offrir de nouvelles clés de compréhension tant sur le personnage que sur son époque.
